Roasted Beet Salad with Goat Cheese Recipe

Ingredients:

  • 3 medium beets, peeled and cubed

  • 1 tbsp lard or tallow

  • Salt and pepper to taste

  • 4 cups mixed greens (arugula, spinach, etc.)

  • 2 oz goat cheese, crumbled

  • 1/4 cup walnuts, toasted (optional)

  • Balsamic vinaigrette for dressing

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Toss the cubed beets with oil, salt, and pepper, and place them on a baking sheet.

  3. Roast for 30-35 minutes, stirring halfway through, until tender.

  4. Toss the roasted beets with the mixed greens, goat cheese, and walnuts (if using).

  5. Drizzle with balsamic vinaigrette and serve immediately.
