Roasted Beet Salad with Goat Cheese Recipe
Ingredients:
3 medium beets, peeled and cubed
1 tbsp lard or tallow
Salt and pepper to taste
4 cups mixed greens (arugula, spinach, etc.)
2 oz goat cheese, crumbled
1/4 cup walnuts, toasted (optional)
Balsamic vinaigrette for dressing
Instructions:
Preheat your oven to 400°F (200°C).
Toss the cubed beets with oil, salt, and pepper, and place them on a baking sheet.
Roast for 30-35 minutes, stirring halfway through, until tender.
Toss the roasted beets with the mixed greens, goat cheese, and walnuts (if using).
Drizzle with balsamic vinaigrette and serve immediately.
