Easy Carrot Soup Recipe
Ingredients:
1 lb (about 4-5 medium) carrots, peeled and chopped
1 medium onion, chopped
2 cloves garlic, minced
1 tbsp lard or tallow
4 cups vegetable or chicken broth
1 medium potato (optional, for extra creaminess), peeled and chopped
1 tsp grated fresh ginger (optional, for extra flavor)
Salt and pepper to taste
1/2 cup coconut milk or heavy cream (optional for creaminess)
Fresh herbs (like thyme or parsley) for garnish (optional)
Instructions:
Sauté the aromatics: In a large pot, heat the oil over medium heat. Add the chopped onion and garlic, sautéing for about 5 minutes until the onion is soft and translucent.
Cook the carrots and potato: Add the chopped carrots and potato (if using) to the pot. Stir to combine, and cook for another 5 minutes, stirring occasionally.
Add the broth and season: Pour in the broth, and add a pinch of salt, pepper, and ginger (if using). Bring to a simmer and cook for about 20-25 minutes until the carrots and potatoes are tender.
Blend the soup: Once the vegetables are soft, use an immersion blender to puree the soup directly in the pot until smooth. If you don't have an immersion blender, you can carefully transfer the soup in batches to a regular blender.
Add creaminess: Stir in the coconut milk or heavy cream, if desired, and adjust the seasoning with more salt and pepper if needed.
Serve: Ladle the soup into bowls, and garnish with fresh herbs if desired. Enjoy!
