Mashed Root Vegetables

Ingredients:

  • 2 large russet potatoes, peeled and cubed

  • 2 medium parsnips, peeled and chopped

  • 2 carrots, peeled and chopped

  • 1/2 cup milk or cream

  • 2 tbsp butter

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large pot, bring salted water to a boil. Add the potatoes, parsnips, and carrots. Cook for 15-20 minutes or until all vegetables are tender.

  2. Drain and return the vegetables to the pot.

  3. Add butter and milk (or cream), and mash until smooth. Season with salt and pepper to taste.

  4. Garnish with fresh parsley if desired and serve hot.
