Orange & Almond Cake (Gluten-Free)
A moist and flavorful cake with whole oranges and ground almonds.
Ingredients:
2 whole oranges (organic, washed)
1 cup almond flour
1/2 cup honey or sugar
4 eggs
1 tsp baking powder
Instructions:
Boil the oranges whole for 40 minutes, then let them cool.
Blend the oranges (with peel) into a smooth puree.
Preheat oven to 350°F (175°C).
In a bowl, whisk eggs, sugar, and baking powder. Mix in almond flour and orange puree.
Pour into a greased cake tin and bake for 40-45 minutes.
Let cool before serving.
