Vegan Orange & Coconut Rice Pudding
A creamy and tropical dessert.
Ingredients:
1/2 cup jasmine or short-grain rice
1 can coconut milk
1/2 cup fresh orange juice
1/4 cup maple syrup
1 tsp vanilla extract
1 tsp orange zest
1/4 tsp cinnamon
Toasted coconut flakes for topping
Instructions:
In a saucepan, combine rice, coconut milk, orange juice, and maple syrup.
Bring to a simmer, stirring occasionally, until rice is tender (about 25 minutes).
Stir in vanilla, orange zest, and cinnamon.
Serve warm or chilled, topped with toasted coconut flakes.
