Vegan Orange & Coconut Rice Pudding

A creamy and tropical dessert.

Ingredients:

  • 1/2 cup jasmine or short-grain rice

  • 1 can coconut milk

  • 1/2 cup fresh orange juice

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 1 tsp orange zest

  • 1/4 tsp cinnamon

  • Toasted coconut flakes for topping

Instructions:

  1. In a saucepan, combine rice, coconut milk, orange juice, and maple syrup.

  2. Bring to a simmer, stirring occasionally, until rice is tender (about 25 minutes).

  3. Stir in vanilla, orange zest, and cinnamon.

  4. Serve warm or chilled, topped with toasted coconut flakes.
