Wild Onion & Oyster Mushroom Soup
A comforting, earthy soup for cool evenings.
Ingredients:
1 cup wild onions, chopped
2 cups oyster mushrooms, sliced
4 cups vegetable or chicken broth
2 tbsp butter or olive oil
1 clove garlic, minced
½ cup heavy cream (optional)
Salt & pepper to taste
Instructions:
In a pot, sauté wild onions and garlic in butter until fragrant.
Add mushrooms and cook until softened.
Pour in broth and simmer for 15 minutes.
Blend part of the soup for a creamier texture or leave it chunky.
Stir in cream (if using), season, and serve warm.
