Wild Onion & Oyster Mushroom Soup

A comforting, earthy soup for cool evenings.

Ingredients:

  • 1 cup wild onions, chopped

  • 2 cups oyster mushrooms, sliced

  • 4 cups vegetable or chicken broth

  • 2 tbsp butter or olive oil

  • 1 clove garlic, minced

  • ½ cup heavy cream (optional)

  • Salt & pepper to taste

Instructions:

  1. In a pot, sauté wild onions and garlic in butter until fragrant.

  2. Add mushrooms and cook until softened.

  3. Pour in broth and simmer for 15 minutes.

  4. Blend part of the soup for a creamier texture or leave it chunky.

  5. Stir in cream (if using), season, and serve warm.
