Primrose and Honey-Infused Lemonade
A refreshing Primrose Lemonade is the perfect drink to enjoy during Beltane. The floral notes of primrose combined with the sweetness of honey make this a delightful beverage to celebrate the season.
Ingredients:
1/4 cup primrose flowers (ensure they are safe for consumption, or substitute with edible flowers like pansies or violets)
4 cups water
1/4 cup honey (or more to taste)
Juice of 2 lemons
Ice cubes
Fresh mint (optional)
Instructions:
Boil 2 cups of water, then pour it over the primrose flowers in a heatproof bowl. Let steep for about 10 minutes.
Strain the flowers from the liquid and discard them.
In a separate jug, mix the remaining 2 cups of cold water, honey, and lemon juice.
Add the primrose infusion to the jug and stir until the honey is dissolved. Adjust the sweetness if needed.
Serve chilled over ice, garnished with fresh mint and extra edible flowers for decoration.
