Honeycakes with Lavender and Rosemary

These honeycakes are sweet, aromatic, and perfect for Beltane celebrations, infused with lavender and rosemary for a magical touch.

Ingredients:

  • 1 cup flour (whole wheat or spelt)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter (room temperature)

  • 1/4 cup honey

  • 1 egg

  • 1 tablespoon dried lavender flowers

  • 1 tablespoon fresh rosemary, finely chopped

  • 1/4 cup milk (or almond milk)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet or line it with parchment paper.

  2. In a bowl, combine the flour, baking powder, and salt.

  3. In a separate bowl, beat the butter and honey together until light and fluffy.

  4. Add the egg to the butter mixture and mix until combined.

  5. Gently fold in the lavender and rosemary.

  6. Gradually add the flour mixture to the wet ingredients, alternating with the milk. Mix until the dough is just combined.

  7. Scoop spoonfuls of dough and drop them onto the prepared baking sheet, spacing them a few inches apart.

  8. Bake for 12-15 minutes, or until the edges turn golden brown.

  9. Let the honeycakes cool before serving. Enjoy with tea or as part of your Beltane feast!
