Dandelion Simple Syrup
Dandelion simple syrup is a lovely, herbal syrup that brings a subtle, floral sweetness to drinks, and it’s a great way to capture the essence of spring!
Ingredients:
2 cups fresh dandelion petals (be sure to only use the yellow parts, discarding the green stems)
2 cups water
2 cups sugar/honey
Instructions:
Harvest the Dandelions: Pick fresh dandelion flowers. Make sure they're from an area free of pesticides or chemicals.
Prepare the Flowers: Rinse the dandelions gently to remove any dirt or insects. Carefully remove the petals from the flowers (discard the green parts, as they can be bitter).
Make the Infusion: In a medium saucepan, combine the water and dandelion petals. Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
Simmer the Flowers: Let the petals steep in the water for about 15-20 minutes, until the water is fragrant and has taken on a yellow tint.
Strain the Flowers: Once the infusion is ready, strain the liquid through a fine mesh strainer or cheesecloth to remove all the petals.
Make the Syrup: Return the strained liquid to the saucepan and add the sugar. Stir until the sugar is fully dissolved.
Simmer: Bring the mixture back to a simmer and cook for another 5-10 minutes, allowing the syrup to thicken slightly.
Cool and Store: Let the syrup cool, then transfer it to a jar or bottle. Store it in the refrigerator, where it will keep for about 1-2 weeks.
Uses: Use this dandelion syrup in cocktails, mocktails, teas, or drizzle it over desserts like cakes, ice cream, or pancakes.
