Chickweed & Wild Garlic Pesto

A fresh, nutrient-packed pesto perfect for spreading on bread or tossing with pasta.

Ingredients:

  • 2 cups fresh chickweed (washed and chopped)

  • ½ cup wild garlic or wild onion greens (chopped)

  • ¼ cup nuts (pine nuts, walnuts, or sunflower seeds)

  • ¼ cup Parmesan cheese (optional)

  • Juice of ½ lemon

  • ½ cup olive oil

  • Salt & pepper to taste

Instructions:

  1. Blend all ingredients in a food processor until smooth.

  2. Adjust seasoning and consistency by adding more olive oil if needed.

  3. Store in the fridge for up to a week or freeze for later.
