Chickweed & Wild Garlic Pesto
A fresh, nutrient-packed pesto perfect for spreading on bread or tossing with pasta.
Ingredients:
2 cups fresh chickweed (washed and chopped)
½ cup wild garlic or wild onion greens (chopped)
¼ cup nuts (pine nuts, walnuts, or sunflower seeds)
¼ cup Parmesan cheese (optional)
Juice of ½ lemon
½ cup olive oil
Salt & pepper to taste
Instructions:
Blend all ingredients in a food processor until smooth.
Adjust seasoning and consistency by adding more olive oil if needed.
Store in the fridge for up to a week or freeze for later.
